Lemon Blueberry Bread

Lemon Blueberry Bread

Ingredients:
4 Large eggs
1 cup milk
1 tsp salt
2 tsp baking powder
4 cups fresh blueberries
2 tbs lemon peel
3 cups all purpose flour
2 2/3 cup sugar
12 tbs unsalted butter

*4 tbs unsalted butter-melted
*6 tbs lemon juice

Directions:
1. Preheat oven to 325 degrees F. Grease a 13x9 pan.
2. In a bowl, sift together flour, baking powder and salt.
3. In large bowl, cream butter and sugar.
Add eggs, one at a time.
Mix well after each addition.
Add grated lemon peel.
4. Mix in dry ingredients alternating with milk.
Fold in blueberries.
Spoon into pan.
5. Bake for 1 hour and 15 minutes at 325 degrees F.
6. After baking, pierce loaf with a toothpick many times.
Mix lemon juice and melted butter and pour over cake.
Cool 30 minutes on rack.

The blueberries all settled to the bottom but it was amazingly delicious!
