Frogmore Stew

*I've also used bigger, white potatoes and cut them up with skins on.
**I've used kielbasa and sausage at different times; both are great.

FROGMORE STEW
MAKES 12 SERVINGS
PREP: 10 MIN., COOK: 30 MIN.

Ingredients:
5 quarts water
1/4 cup Old Bay Seasoning
4 pounds small red potatoes *
2 pounds kielbasa or smoked sausage**, cut into 1 1/2-inch pieces
12 ears fresh corn, halved
2-4 pounds unpeeled, large shrimp
Old Bay Seasoning
Cocktail sauce


BRING 5 quarts water and 1/4 cup Old Bay Seasoning to a rolling boil in a large covered stockpot.
ADD potatoes; return to a boil, and cook, uncovered, 10 minutes.
ADD sausage and corn, and return to a boil. Cook 10 minutes or until potatoes are tender.
ADD shrimp to stockpot; cook 3 to 4 minutes or until shrimp turn pink.
Drain.
Serve with Old Bay Seasoning and cocktail sauce.

Baked Fried Chicken

I adapted this from a recipe on marthastewart.com...
BAKED FRIED CHICKEN
Serving: Serves 6
Ingredients:
Olive or Vegetable oil, for baking sheet
1 Cup buttermilk
1 Can seasoned bread crumbs
2-3 Pounds chicken breasts (rinsed and patted dry)

Directions:
1. Preheat oven to 400 degrees;.
2. Rub a baking sheet with oil (don't skimp here or it will stick!).
3. Place the chicken in the buttermilk mixture, turning to coat evenly.
4. Remove chicken from liquid (one piece at a time), letting excess drip back into bowl; dredge in the breadcrumb mixture, turning to coat evenly.

5. Place coated chicken pieces on prepared baking sheet.
6. Bake until chicken is golden brown, about 35 minutes.

Banana Bread Recipe

My teenaged daughter made this and it was so easy and so good!
It all started with 3 over-ripe bananas and a quick Google search...

Banana Bread Recipe
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cup of flour

No need for a mixer for this recipe.

1. Preheat the oven to 325°F.
2. Mix butter into the mashed bananas in a large mixing bowl with a wooden spoon.
3. Mix in the sugar, egg, and vanilla.
4. Sprinkle the baking soda and salt over the mixture and mix in.
5. Add the flour last, mix.
6. Pour mixture into a buttered 4x8 inch loaf pan.
7. Bake for 1 hour.
8. Cool on a rack.
9. Remove from pan and slice to serve.

(Almost Free) French Toast

So easy, a kid can make it!
It tastes really good and is really filling.
If there's any leftover egg mixture, just throw it in the pan and make scrambled eggs.
Serve it on the side...

French Toast
Feeds 10

Blend:
6 eggs (beaten)
1/2 cup milk
4 tbsp water

Toast:
20-22 slices of bread
(a loaf)

Heat frying pan or griddle moderately hot. Grease with butter.
Dip slice of bread in egg mixture and put on hot frying pan or griddle.
Brown on both sides.
Serve with syrup or jelly.
(Sprinkle with powdered sugar for a more festive look)

Crusty Pepperoni Pizza

For my family of 5- two of which are men- I doubled this and it was plenty!
I didn't measure; I just covered the bread with sauce, then added lots of cheese and the pepperoni. I didn't cut the pieces till after it was done. It came out perfectly!
It's quick, pretty, and filling.
My kind of cooking!

Crusty Pepperoni Pizza
adapted from: Family Circle- June 2007

Makes 8 servings
Prep: 5 minutes
Bake: 12 minutes

Ingredients
1 loaf Italian bread
1/2 cup jarred (or canned) pizza (or spaghetti) sauce
2 cups shredded mozzarella cheese
24 slices pepperoni

Directions
1. Heat oven to 400 F.
2. Slice Italian bread lengthwise.
3. Spread each piece of bread with pizza sauce, dividing equally.
4. Top with 1/4 cup cheese and 3 slices of pepperoni.
5. Bake at 400 F for about 12 minutes
or until cheese is melted and lightly browned.
6. Serve immediately.
